As Beppe Lodi wrote in Nonna Genia, the secular bible of Langhe cuisine, "hunger is a physiological need, taste is a cultural need." This is why, in the Langhe, the dining experience is poetry: each course offers an experience born from centuries of history, with recipes passed down from mother to daughter and jealously guarded before being revisited in the chefs' kitchens.

Tacuma ate

Knowledge and flavors are rooted in this land of Malòra, in the humble traditions of rural culture, as well as in the splendor of the court cuisine of the Royal House of Savoy. The passage of time has successfully blended styles and ingredients, making this region's culinary offerings unique. Today, we use only seasonal, authentically fresh ingredients for our dishes, favoring local producers, a choice that combines ethics and environmental sustainability.
