A checkered tablecloth, the wooden table, the fragrance of fresh bread, the flavors of country cooking, the company of friends, the smile of those ready to welcome you to share a festive moment together: Lostu is one of those old-fashioned trattorias, where you can breathe the most authentic atmosphere of the Langhe hills, rediscovering traditional recipes and experiencing conviviality in a relaxed and jovial setting.

The cuisine is traditional Piedmontese, “homestyle,” with vegetables harvested from the garden or purchased directly from farmers, following the seasons in choosing the ingredients we offer.

Our hen, the symbol of the osteria, perfectly embodies this concept, recalling the farmyard, tradition, the wisdom of those who work the land, and the taste of the most genuine and natural dishes. The hen is the animal that every farmer had, and that populated the chicken coops of every farmhouse. These are the free-range hens that, for as long as anyone can remember, have roamed the courtyards, good for eggs and excellent in broth. They set the rhythm of the day, with the rooster crowing in the morning, and the hens retreating to the trees when it’s time to sleep.

Lostu is not the bistro of Borgo Sant’Anna, but a place—just like the trattorias of the past—where you can breathe the most authentic atmosphere of these hills, savoring forgotten recipes at your own table or at the large shared table that embodies the spirit of the inns of old, sharing a meal with strangers with whom, if desired, you can make new friends. As Beppe Lodi wrote in Nonna Genia, the secular bible of Langhe cuisine, “hunger is a physiological need, while taste is a cultural need.” This is why, in the Langhe, the experience of the table is poetry: with each course, you live an experience that is the result of centuries of history, with recipes handed down from mother to daughter and carefully guarded before being revisited in the kitchens of chefs.

Knowledge and flavors are deeply rooted in this land of Malòra, in the humble traditions of peasant culture, as well as in the splendor of the court cuisine of the House of Savoy. The flow of time has managed to blend styles and ingredients, making the gastronomic offerings of this territory unique.

Today, for our dishes, we use only seasonal ingredients, authentically genuine, favoring local producers, in a choice that combines ethics and environmental sustainability.
